• The Atelier uses Swiss wheat as the standard.
• Swiss IP* and Swiss Biomehl.
• Hartweizen (Durum) and Buchwiezen (Buckwheat) grown in Switzerland.
• Toku flour for Ramen and Kumpu flour for Udon from Japan.

*Higher ash content and is therefore darker than Swiss Bio and Japanese flour
